Cavalli - Reggio Emilia Balsamic Vinegars

These traditional balsamic vinegars of Reggio Emilia are made and bottled under the strict supervision of the Consortium Technical Committee, which classifies them with the red, silver or gold seal in order of increasing quality. Each bottle is individually serial numbered and is coming from a small series of 337 to 461 bottles made in 2002.

Reggio Emilia Traditional Balsamic vinegar is obtained from boiled, concentrated grape musts.  The aging and refinement process takes place in sets of barrels of different woods over a long period of time, and never less than 12 yeas.  Every wood gives the vinegar a special characteristic: chestnut, is rich in tannin and will help create the typical dark color, cherry sweetens its flavor, mulberry will concentrate it more quickly and give the aroma a hint of vanilla, and juniper will provide a resinous aroma, while oak, considered not to affect the flavor, is generally used for the smallest casks where the matured vinegar is placed.  After aging, vinegar is collected annually: 3l of mature vinegar, no more than 20% of the liquid in the last cask in the set.
