Marzipan
Served as the crowning of a meal at the Sultan's table in former times, this delicate combination of almonds and sugar nowadays can be enjoyed by anyone. The most famous place for marzipan today is the city of Lübeck
in Northern Germany with a tradition in marzipan making dating back to the
15th century.
Marzipan is a confectioners taste sensation
beyond description! Succulent Sicilian almonds are mixed with sugar and roasted in large copper cauldrons to make a palate pleasing confection according to a century’s old recipe. In Germany when one mentions Marzipan, only one name comes to mind - Neideregger. Neideregger marzipan contains a higher ratio of almonds to sugar thus it’s fabulous flavor (and higher price). Marzipan can be consumed as a real treat or used in baking. The most popular, for eating, are the marzipan loaves covered with dark chocolate. We also stock plain marzipan for eating or baking. These would be used in recopies that call for marzipan.
If your marzipan has been in the cupboard for a while and
has become hard, Odense manufacturer recommends to "revive" it with the
following method. Place the unwrapped roll in a plastic bag, together with
two slices of bread, or an apple that has been cut in half. Leave the sealed
bag on the counter overnight. Often this will make the product soft again.
