Mrs. Cardullo's Chestnut Stuffing
8 Tbs. butter (1stick) or margarine
(you can use olive oil)
Preparation: In a large skillet, over medium heat, melt the butter and then add the onion & celery. Cook until tender, stirring occasionally. Remove from heat and then mix with the bread cubes, apricots, chestnuts, poultry seasoning, salt & pepper and toss to mix well about 20 - 30 minutes before using. If you are going to serve the stuffing separately toss in some turkey pan drippings to enhance the flavor. If the drippings contain to much fat skim some off or use a pouring cup that separates the fat.
