Caviar

Due to recent Export Quota Changes from CITES (Convention on International Trade in Endangered Species), shipments of caviar have been reduced.  Cardullo's is one of the few shops that stock fresh malossol caviar. The term "malossol" means "little salt" in Russian. Beluga, Osetra and Sevruga, all come from nearly extinct sturgeon species due to over fishing. Farm raised sturgeon is now making its way into the marketplace. Cardullo's offer a unique, unsurpassed selection of the finest, first quality malossol caviar available, directly sourced and hand selected from each catch. 

 

To guarantee freshness all caviar orders must be shipped next day air. Please, make sure to choose Priority Overnight option in the shopping cart.

Paddlefish, a prehistoric cousin of the sturgeon, produces delicate caviar with a mild smoky flavor. This is one of the most popular caviars because it may be enjoyed by all, alone or as a garnish. Try Spoonbill caviar on tuna tartare or raw oysters. An even more decadent combination is caviar on camembert cheese.

Spoonbill Paddlefish is wild caught in rivers of Tennessee, Ohio, Indiana, Mississippi, Missouri, and even Montana. These fisheries are sustainable, but researchers have learned to breed and culture the ancient filter feeders. If you find yourself on the river, you may see the paddlefish swimming upside down and feeding on small shrimp near the surface.
